Spaghetti Bolognese Sauce

So to begin it should be noted that Cam and I are by no means chefs, we do however really enjoy cooking and this spag' bol' sauce is to die for!

This has been made in BULK to dehydrate for our big Australian Alpine Walk at the end of the year! This makes A LOT ...but it's bloody delicious!

If you are looking at dehydrating meals this one is one of the all time classics (and it's my favorite!). You can fill it with flavor and it rehydrates really, really well! Please take note of the absence of oil and the way in which we treat the mince if you're looking to dehydrate this meal. Serves: 14 (approx)

Ingredients

3x brown onions (diced)

4 tsp crushed garlic

7 bay leaves

3 star anise

2kg mince beef

600g mushrooms diced

2 carrots grated

1 1/2 zucchini grated

3 tbsp dried oregano

3 tbsp dried parsley

800g canned black beans

800g kidney beans

1.4L passata sauce

500g crushed tomatoes

3 beef stock cubes with water

2 whole red chilies (thinly sliced)

2 cups of red wine (we used cheap stuff!)

200g tomato paste (adds rich tomato flavor)

Worcestershire Sauce (makes it a little sweeter)

Salt and pepper to taste (help to bring out all the flavors)

A jug of water for oil substituting (have it ready always!!)

Total cost: AU$44.97

Method

  1. In a frying pan covered with a thin layer of water brown your mince. We did this in several smaller batches. Once one batch is cooked strain it through paper towel to remove excess oil. Rinse the pan between each batch then set aside. (Get ready to be amazed by how much fat comes out of the mince!). Keep adding water as you need it.

  2. In your large saucepan covered with a thin layer of water add onion, garlic, bay leaves and star anise. Cook this until there is no smell of raw onion (this will take longer than normal due to substituting oil with water). Remember to keep adding small amounts of water as you need it!

  3. Once onion no longer smells raw take out bay leaves and star anise. Add in mushrooms and cook until slightly softened

  4. Add carrot and zucchini and cook for a further 2mins

  5. Add mince, black and kidney beans, Passata sauce, crushed tomatoes, oregano, parsley, wine and red chili and stir.

  6. Bring to the boil

  7. At this point its upto you how much of the rest of the ingredients (tomato paste, Worcestershire sauce, salt and pepper) you add. We added roughly half a jar of tomato paste and like maybe 100ml of Worcestershire sauce and generous amounts of salt and pepper

  8. Then turn down the heat and let it simmer until it is think. Ensure you don't burn it, but you're going to be taking all the moisture out of it when you dehydrate it. It's important to cook it down lots and let all the flavors develop fully - remember you want as much flavor as possible!
